We pick our herbs early in the morning for our vinegars, and stuff as much herbal goodness as we can into each jar. Then we pour vinegar to the top, and let it steep in the sun a full two weeks before being strained and placing into steralized jars, each with a sprig or two of herbs. Not only are these bottled vinegars beautiful, but the fresh taste they impart to salads is outstanding!
Our favorite is thyme, and rosemary, mixed in a bowl with diced tomatoes, & olive oil, poured over any salad it's devine!
Thyme vinegar is very good over any vegetable.
